Torre dei Lamberti

From the top of this 84m-high watchtower you'll have tremendous views of Verona and the mountains - best to avoid foggy days though. The building itself, completed in 1463, is well worth a visit in its own right. There's a lift for part of the climb but you'll have to do the last few floors under your own steam.
